I usually try to keep it simple and healthy when I cook at home. I don't count calories or points or anything like that, but I will make what
I think are healthier choices - like using whole grain pasta over regular pasta.
My latest effort has been to ditch the ground beef "taco in a box" taco night for ground turkey and better-for-you toppings.
At first it doesn't sound too tasty, but I can honestly say I will never go back to using ground beef for tacos. Ground turkey is pretty simple to pack with flavor, and it doesn't boast the grease that you have to drain using beef.
I combine turkey with about 1/4 of an onion chopped. I cook it until there's no pink in the turkey and then add in a little cumin, oregano, chili powder and a dab of salt and pepper. I also add half a can of chopped tomatoes.
This night I chopped some spinach leaves, onions and an avocado for the toppings. (Have I mentioned my love affair with avocado? LOVE it.) The plate would look even better if I had some tomatoes chopped up as well as purple onion, just to add some color.
I also added some black beans. I simply heat up the canned black beans in the microwave. (Have I mentioned Ana's love affair with black beans? She LOVES them.)
I use plain tortillas that I also heat up in the microwave. I contemplated buying whole wheat tortillas this week at the grocery store but didn't. I will try them one of these days - but baby steps here people!
My husband eats these tacos with just the turkey. He says they have so much flavor that he doesn't need to add any toppings. I like toppings.
